1. Mix mayonnaise and Sriracha sauce until blended.
2. For each serving:
3. Top 1 bread slice with 1 cheese slice, 56 g caramelized onions, 40 g cheese curds and 2 bacon slices; cover with second each cheese slice and bread slice.
4. Spread outside of sandwich evenly with 1 fl oz (29.5 mL) mayonnaise mixture.
5. Cook in small nonstick skillet on medium heat 1 to 2 min. on each side or until cheese is melted and sandwich is golden brown on both sides.
Variation: Adjust the heat level of sandwich according to taste - either omit the Sriracha sauce, or increase it as desired.
Make Ahead: The mayonnaise mixture can be mixed together ahead of time. Refrigerate up to 24 hours before using as directed.
