1. Combine first 5 ingredients in large bowl.
2. Mix remaining ingredients until blended. Add to chicken mixture; mix lightly.
3. Refrigerate 2 hours.
Special Extra: Sprinkle with 1/4 cup chopped fresh cilantro just before serving.
Substitute: Substitute 1-1/2 cups frozen mixed vegetables, thawed, for the carrots, red peppers and peas.
