Homestyle Chicken-Potato Salad

Servings: 8 servings, 1 cup (250 mL) each

What you need

1-1/2 lb. (675 g) boneless skinless chicken breasts, cooked, shredded
4 cups cooked cubed red potatoes
1 carrot, thinly sliced (about 1/2 cup)
1 small red pepper, chopped (about 1/2 cup)
1/2 cup frozen peas, thawed
1/2 cup Miracle Whip Original Spread
1/2 tsp. garlic salt
1 small jalapeño pepper, finely chopped

How to do it

1. Combine first 5 ingredients in large bowl.

2. Mix remaining ingredients until blended. Add to chicken mixture; mix lightly.

3. Refrigerate 2 hours.

Tips

Special Extra: Sprinkle with 1/4 cup chopped fresh cilantro just before serving.

Substitute: Substitute 1-1/2 cups frozen mixed vegetables, thawed, for the carrots, red peppers and peas.
